Pork Chops With Tomato

Ingredients:
- 2 tablespoons flour
- 1 tablespoon chopped fresh sage, or 1 teaspoon dried
- 4 lean boneless pork chops, trimmed of any excess fat
- 2 tablespoons olive oil
- 15g butter<
- 3 red onions sliced into rings
- 1 teaspoon castor sugar
- 8 plum tomatoes (2 cans) quartered
- salt & pepper
Method:
- Mix the flour, sage, salt and pepper on a plate. Lightly dust the pork chops on both sides with the seasoned flour.
- Heat the oil and butter in a frying pan, add the chops and cook them for 6-7 minutes on each side until cooked through.
- Drain the chops, reserving the pan juices, and keep warm.
- Toss the onion in the lemon juice and fry along with the sugar and tomatoes for 5 minutes until tender.
- Serve the pork with the tomato and onion, along with a green salad and fried potato wedges.
