Tuna Pasta with Apple and Mango ∞
Tuna pasta salad variation #342, with a tangy and spicy kick. Every time I make this it is different, but this one worked pretty well, so I thought I would try and write up the recipe I used (from memory and all quantities are approximate).
Ingredients
For about 3 servings:
- penne pasta
- 1 onion
- 1 red pepper
- 3 cloves garlic
- handful mushrooms
- cup of (frozen) peas
- 2 spoons mango chutney
- 3 or 4 spoons natural yoghurt
- 1 tsp flaked chillies
- salt and pepper
Method
- Firstly cook the pasta until just soft, meanwhile chop the veg into chunks
- Then fry the onion for about 5 mins until starting to yellow, add pepper and fry for a bit longer, then add garlic, mushrooms, peas, chillies and seasoning
- Finally, stir in the mango chutney and enough yoghurt to give a thick, but still almost dry, consistency
Serve with grated cheese, and can be eaten either hot or cold
